Homemade Coconut Butter

Coconut butter is one of my AIP favorite treats.

A 16oz jar of coconut butter at the grocery store costs between $10-$15.  I can make 16oz for about $3.  Good savings!  And it’s SUPER easy- it only takes one ingredient.

What do I do with the coconut butter?  Mostly I eat it by the spoonful.  It’s that good.  You can also dilute it and use it in place of coconut milk in dishes where the texture doesn’t matter.  It can also go on top of baked goods, used in desserts and added to drinks (like roasted dandelion root and chicory coffee). I add it into smoothies as well.  1T of coconut butter has about 100 calories and 10 grams of super healthy fat.  It’s a good way for me to get some extra calories in as I’ve been loosing weight on AIP (not a good thing for me!)

This stuff seriously tastes like a special treat- I think you’ll really enjoy it.

All you have to do to make it is put shredded coconut in your food processor or high speed blender and blend the heck out of it (about 15 minutes in my food processor).  It will be super dry at first, then it will get kinda clumpy and then it will turn to a liquidy coconut joy.  That’s what you’re looking for.

Place shredded coconut in the food processor or blender.  I used 2 cups and got about 1/2 cup of finished coconut butter.

In the summer it will stay nice and gooey on your counter but if it solidifies from your A/C or colder weather you can just put it in a bowl of water.

This stuff is so amazing- it’s a great treat and can be used in many ways.

  1. At the clumpy stage I add extra coconut oil, a little honey and a little vanilla. The extra oil makes it softer, and the end product reminded me of the inside of a mounds bar. I have a terrible sweet tooth.
